Where leaf nitrogen content is smaller for plants grown under enriched [CO2] there may be some changes in grain quality. Reductions in N and protein content have been reported for flour produced from grain of wheat plants grown under elevated [CO2] (Conroy et al., 1994). For field-grown rice, percentage grain protein decreased with either elevated [CO2] or increasing temperature (Ziska et al., 1997). Plant breeders may have to impose selection pressure for higher protein concentration in grain to offset any decreases accompanying the increases in atmospheric [CO2].
