Parenchyma cells contain solutes in water that are surrounded by a semipermeable membrane (Waldron et al., 1997). This is important in the context of many processes because water can pass through the membrane but larger molecules like sugars cannot. The outflow of water from the cells makes the tissue flaccid or wilted with a less desirable texture; conversely, hydration of the tissue leads to water flow into the cells, such that they become enlarged or turgid leading to enhanced mechanical properties and a more desirable texture.
